Hot Cross Buns
Rex Hot Cross Buns are a gourmet, classic Easter bun, demonstrating how our bakers make everything 1% better from ingredients to process. We make ours from our own light Brioche Bun recipe which include low quantities of Patisserie butter, free range eggs and milk along with organic Shipton Mill flour. This is also a healthy bun – our dough ferments over 2 days like our breads. This means that they are easily digestible. Finally we lift the flavour with added sultana and mixed orange & lemon peel and zest, and a selection of spices like ground nutmeg, cinnamon and ginger. Happy Easter!

Unlike the mass baking industry, we never use “liquid spice flavouring” which comes in a bottle and is sold for convenience & ease rather than food provenance, quality, taste. Somehow the yeast doesn’t seem to like real spices so it’s a challenge for the skilled baker to manage the dough mix – but it’s all worth it for the hundreds & hundreds of Rex hot cross buns devoured over the Easter period.
